Strawberry & Banana Cake Bars – My Fussy Eater

Healthy, low sugar, wholemeal Cake Bars flavoured with banana, strawberries and orange. Perfect to pop into packed lunches or for an afternoon snack.

Healthy Strawberry & Banana Cake Bar

Keeping kids fed with a steady stream of snacks is not an easy job. As my two get older they seem to be demanding more and more to eat between meals and if they have friends over then it’s guaranteed that my snack cupboard will be cleared out!

Today I decided to use only ingredients I have at home to make some tasty and healthy snacks for after school, saving me money and also time in a trip to the shops.

I always have ingredients like flour, eggs, yogurt and coconut oil and I had quite a bit of fruit today too, the perfect combination to make these delicious Fruity Cake Bars!

These bars are really easy to make. All the ingredients get mixed up in one bowl, easy to prep and minimal washing up afterwards!

The mixture is then poured into a baking dish, much easier than spooning it into individual muffin or cupcake cases.

Flour – The wholemeal flour can be substituted for plain flour or any type of gluten free flour too.

Coconut Oil – This can be substituted for butter.

Yogurt – Non-dairy yogurt will work fine.

Honey – Use maple syrup or agave syrup instead.

Egg – I haven’t tried using an egg replacer in this recipe so can’t say that it would definitely work. However if you try it please do let me know.

Banana – If you don’t like banana try using apple sauce instead.

Strawberries – Feel free to use blueberries, raspberries etc instead.

Strawberry & Banana Cake Bars


Healthy, low sugar, wholemeal Cake Bars flavoured with banana, strawberries and orange. Perfect to pop into packed lunches or for an afternoon snack.


  • 100g plain flour
  • 100g wholemeal flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 100g plain yogurt
  • 50g coconut oil or butter, melted
  • 2 tbsp honey
  • 1 medium egg
  • 1 banana, mashed
  • 1 orange
  • 150g strawberries, chopped


  1. Preheat the oven to 180c and line a baking dish with parchment paper. I used an 11x8in dish.
  2. In a large bowl mix together the plain flour, wholemeal flour, baking powder and baking soda with a spoon.
  3. Add the yogurt, melted coconut oil, honey and egg and mix again until well combined.
  4. Add the mashed banana and the zest and juice of the orange. Mix again and finally fold in the strawberries.
  5. Pour this mixture into the prepared dish and bake in the oven for 22-25 minutes until cooked through.
  6. Leave to cool in the dish for a few minutes before transferring to a wire rack to cool completely.
  7. Cut into 18 slices.


  1. These cake bars can be kept in an airtight container for up to 48 hours.
  2. They can also be frozen for up to 2 months and defrosted at room temperature.
