Easy Frozen Creamsicle Yogurt Bites

There are a few flavors that instantly take me back to my childhood. And creamsicle is one of them. I can still close my eyes and remember those hot summer days, running around the neighborhood with friends through the neighbors’ sprinklers and then sitting under the tree in the front yard enjoying one of those delicious vanilla ice cream treats covered in orange sherbet. They were so good. They still are. I still see them in the grocery store now and again, smile and grab a box for the kids and tell them stories of “back-in-the-day”.  Now the kids love creamsicles too. There is just something about the simple combination of orange and vanilla that is just…perfect.

Summer is coming to an end and I wanted to create something for the kids for school lunches that when they opened it, they would smile. They would take a bite and remember the fun summer days we had and look forward to many more to come.

Frozen Creamsicle Yogurt Bites

These yogurt dipped mandarins taste just like creamsicles! You only need 2 ingredients, well, three if you count the sprinkles.

Healthy Frozen Creamsicle Yogurt Bites

They are incredibly easy to make, so take this opportunity to get the kids in the kitchen and make some more memories.

Key Ingredients

  1. Bee Sweet Citrus Mandarins
  2. Vanilla Greek Yogurt
  3. Sprinkles. These aren’t mandatory, but they sure are fun.

How to make Frozen Yogurt Dipped Mandarins

  • First, peel the mandarin.
  • Place some vanilla Greek yogurt in a small bowl.
  • Dip each slice of the mandarin into the Greek yogurt and place the individual pieces on parchment paper.
  • Add sprinkles.
  • Freeze for at least one hour if enjoying as a healthy snack or dessert. Freeze overnight if adding to lunchboxes.

Pro tip: Use small skewers to help keep everyone’s fingers clean during the dipping process.

Each step in making these frozen yogurt dipped mandarin is easy and a lot of fun, so be sure to let the kiddos help…or let them take the lead!

Pro Lunchbox Packing Tip: If these frozen creamsicle yogurt bites get warm, the yogurt will start to melt. We recommend freezing overnight and be sure to include an ice pack in their insulated lunchbox to keep them cold until lunchtime.

Simple Substitutions

  • Use a different flavor yogurt. This is a great opportunity for the kids to experiment with different flavors in the kitchen. We are planning on trying coconut yogurt next.
  • Use melting chocolate. Just be careful when heating it up if you have the kiddos in the kitchen with you (which we hope you do!) melting chocolate can get pretty hot.

Frozen Creamsicle Yogurt Bites

These yogurt dipped mandarin slices are a healthy snack that your kids will love. You only need 2 ingredients and a few minutes of prep time to make these delicious Frozen Creamsicle Yogurt Bites.

  • Bee Sweet Citrus Mandarins
  • Greek Vanilla Yogurt
  • Sprinkles
  • Place a piece of parchment paper on a baking sheet that will fit in the freezer.

  • Peel the mandarin and separate into individual slices.

  • Place a big scoop of vanilla Greek yogurt in a small bowl.

  • Dip each slice of the mandarin into the Greek yogurt, covering about half of the mandarin slice.

  • Place the individual mandarin slices on parchment paper.

  • Add sprinkles.

  • Freeze for at least one hour for a snack, overnight if adding to lunchboxes.

Use mini skewers like we did to help keep fingers clean in the prep process.
Don’t forget the ice pack when adding these to lunchboxes to help keep the yogurt nice and cold.
